Chicken 3 Ways


Roast Chicken For Kids
• 1 free-range chicken
• 50 g soft butter
• 1 garlic clove, chopped (optional)
• 80 ml Worcestershire sauce
• juice of 1 lemon
• salt and freshly ground black pepper to taste

Tie the legs of the chicken together with string. Spread the soft butter and garlic over the skin. Place in a  roasting pan, sprinkle with Worcestershire sauce and lemon juice and season with salt and pepper.

Roast Chicken With Breadcrumb and Parsley Stuffing
• 3 slices white or brown bread
• handful parsley
• 50 walnuts
• 125 g soft butter
• salt and freshly ground black pepper to taste
• 1 free-range chicken
• juice of 1 lemon

Toast the bread – fresh bread doesn’t make good breadcrumbs. Place parsley and walnuts in a food  processor and process until fine. Break the toast into pieces and add to the mixture. Process until fine. Add the soft butter and mix well. Season with salt and pepper. Ease the skin from the chicken breast by gently working it with your fingers from behind (not from the neck), almost like pushing open a bag. Work carefully;
the skin mustn’t tear. Stuff in the filling bit by bit, then fold the skin closed at the opening. Tie the legs of the  chicken together with string. Place in a roasting pan and pour over the lemon juice. Season with salt and  pepper.

Roast Chicken With Fresh Basil, Lemon and Garlic
• 125 g soft butter
• zest of 1 lemon
• handful fresh basil, chopped
• 1 garlic clove, finely chopped
• salt and freshly ground black pepper to taste
• juice of 1 lemon

Mix the butter, lemon zest, basil and garlic together. Season with salt and pepper. Ease the skin from the  chicken breast by gently working it with your fingers from behind (not from the neck), almost like pushing open a bag. Work carefully; the skin mustn’t tear. Stuff in the filling bit by bit, then fold the skin closed at the opening. Tie the legs of the chicken together with string. Place in a roasting pan and pour over the lemon
juice. Season with salt and pepper. 

This is how you roast these 3 chickens:
Preheat the oven to 180ºC. Drizzle the chickens with about 100 ml olive oil and cover the chickens and 
roasting trays with tinfoil. Place in the oven. Remove the tinfoil after 45 minutes, and roast uncovered for 1 hour until tender and golden brown. Allow chickens to cool to room temperature and serve.
