German Apple Pancake


2/3 cup all-purpose flour
2 teaspoons sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
4 large eggs, lightly beaten
1 cup whole milk
1 teaspoon vanilla extract
1 large apple, peeled, cored and thinly sliced
1 teaspoon lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 tablespoons brown sugar, divided
2 tablespoons unsalted butter


Combine the flour, sugar, baking powder and salt in a mixing bowl. In a separate bowl, whisk the eggs, milk  and vanilla together until well blended. Add the wet ingredients to the dry, mix well, cover and refrigerate for 30 minutes.

Preheat the oven to 425°F.

In a small bowl, toss the apple slices with the lemon juice, cinnamon, nutmeg and 1 tablespoon of the brown sugar. Set aside.

Melt the butter in an oven-proof skillet over medium heat. Swirl to coat the pan, then sprinkle the remaining 2 tablespoons of brown sugar evenly over the bottom and arrange the apple slices in a spiral pattern.  Continue cooking for 2 to 3 minutes, then remove from the heat.

Trying not to dislodge the apples, pour the batter into the pan and place it in the oven. Bake until the pancake is puffed and golden around the edges and set in the center, 15 to 18 minutes.
