Oat Biscuits


About 25 – 30 biscuits
• 100 g (110 ml) butter
• 160 g (250 ml) soft brown sugar
• 2 eggs
• 100 g (250 ml) coconut
• 260 g (375 ml) cake flour
• 100 g (250 ml) oats
• 5 ml bicarbonate of soda


Preheat the oven to 180ºC. Melt the butter and brown sugar in a mediumsized saucepan over a low heat.  Remove from the heat and allow to cool slightly. pour into a large mixing bowl and add the eggs. Mix well.  Add the rest of the ingredients and mix until it forms a soft dough. Roll into small balls of about 25 g each.  Line a baking tray with baking paper and spray with non-stick spray. place biscuits about 2 cm apart. Flatten slightly with your fingers. Bake for 12 – 15 minutes or until golden brown. Allow to cool. Store in an airtight  container.
