Perfect Fish and Chips


• 6 portions frozen hake fillets

BATTER
• 120 g cake flour
• 1 egg yolk
• 90 ml beer (drink the rest!)
• 1 ml salt
• 45 ml milk, mixed with 30 ml cold water
• 2 egg whites
• 600 ml sunflower oil for frying



Place the cake flour in a mixing bowl. Make a hollow in the centre of the flour. Put the egg yolk, beer and  salt in the centre. Mix with a balloon whisk until smooth. Add the milky water a little at a time, whisking  constantly. Cover the bowl with a tea towel and let the batter rest for at least 30 minutes. Beat the egg whites until they form soft peaks and carefully fold them into the batter. Heat the oil in a deep saucepan. Dip 2 – 3 fish fillets in the batter and fry carefully for about 4 – 5 minutes on each side. Drain on kitchen paper and repeat with the rest of the fish. Serve with chips.
