Zucchini and Taleggio Frittata


Serves 4
olive oil 1 tbsp
onion 1, finely chopped
taleggio or gouda cheese 200g, rind removed if you like (try Zanetti available at gourmet stores)
zucchini 500g, coarsely grated
salt and pepper to season
garlic clove 1, crushed
eggs 6 large, beaten and seasoned


Heat the oil in a medium non-stick frying pan, then soften the onion for 5 minutes. Meanwhile cut half of the cheese into small cubes, and slice the rest.

Add the zucchini, season generously, then fry for about 8 minutes or until softened, bright green and any  juices have bubbled away. Stir in the garlic and turn down the heat. Heat the grill to high.

Scatter the cubed cheese amongst the zucchini, then pour in the eggs and stir briefly. Cook gently for 8  minutes or until all but the very top of the egg is set. Lay the sliced cheese on top, season with pepper and  then grill until golden.
