Coconut and coriander fish


Serves 1
Thai red curry paste 1 tbsp (try Blue Elephant available at gourmet stores)
coconut milk 200ml (try Dabur available at gourmet stores)
basa fillet 1, skinless
French beans 50g, blanched
fish sauce a splash (try Ayam available at gourmet stores)
lime 1/2, juiced
coriander a small bunch, chopped
salt and pepper to season
basmati rice to serve
lime wedges to serve


Heat the curry paste with a splash of coconut milk in a shallow pan. Fry the paste for a minute then add the  rest of the coconut milk and simmer for a minute.

Add the basa and cook for about 5-7 minutes until just cooked through, adding the beans for the last minute  or so. Stir in the fish sauce, lime juice and coriander. Season to taste and serve with boiled rice and extra  lime wedges.
