Easy Food Recipes and Cooking - Kale and Ricotta Frittata
Serves 4
2 tbsp olive oil
1 onion or leek, finely sliced
2 cloves garlic, finely chopped
200g black kale, leaves stripped from their stalks & shredded
200g ricotta cheese
6 eggs
½ tsp freshly grated nutmeg
2 tbsp parmesan or pecorino sea salt & ground black pepper
Heat the oil in a non-stick pan and fry the onion gently for about 8 mins. Add the garlic and fry gently for a couple of mins. Add the kale and wilt for a few mins.
In a large bowl, mix the ricotta, eggs, nutmeg and cheese. Season. Pour over the kale mixture and cook over a very low heat for a few mins until just set underneath. Finish under the grill or in the oven, until the top is just set.
Leave to cool slightly, cut into wedges and serve.
