Melon spritzers
Serves 6

Put 500g cantaloupe melon chunks in a blender or food processor with the juice of 2 limes and 100ml apple  juice. Whizz to the smoothest you can get, then stir in the zest of 2 limes. Chill until ready to serve.

To serve, pour the melon mixture into a big jug with 250ml chilled white wine, then add an equal part of  chilled lemonade and stir well. Thread a few melon balls onto skewers, if you like, add one to each glass with  some crushed ice, and top up with the melon spritzer.


Grown-up limeade
Serves 5

Slice 2 limes and lay the slivers on a tray and freeze for at least an hour. Put 10 deseeded, roughly chopped  limes (including the skin) in the bowl of a food processor or blender with 200g caster sugar and 100ml  water. Whizz until juicy and completely broken down.

Pour the mix through a sieve, so that all the pulpy bits remain and you have lots of juice. Pour into a big jug  with lots of ice and the lime slivers, and top up with 1l soda water. Serve with 30ml vodka or rum.

Peach Punch
Serves 8

Heat 4 tbsp caster sugar with the zest of 1 1/2 lemons and 100ml water until the sugar dissolves. Cool, pour  into a jug and add 750ml rosé wine, the juice of 1 1/2 lemons and 150ml peach schnapps.

When ready to serve add plenty of ice with 1 sliced peach and top up with 1l soda or tonic to taste.
