Mini pizza with spring flowers and pecorino cheese


Makes 12 small pizzas
Ingredients:
250g flour
50g strong flour
5g salt
3g sugar
1 tablespoon extra virgin olive oil
2.5dl lukewarm water
10g fresh yeast
100g grated pecorino cheese
50g spinach
20g edible primrose
20g edible violet

Method
Mix the two different types of flour. Dissolve yeast and sugar in some water and add the olive oil. Add the liquids to the flours, knead well for 20 minutes until you have a smooth and soft dough. Allow to rest for 40 minutes. Divide dough into 12 pieces, form the mini pizza and let rest on the baking trays for 10 minutes. Bake at 180ºC for 8 minutes.

Remove from the oven and garnish with the cheese, spinach and flowers.
