Pizza bonbons with radicchio and smoked caciotta cheese


Ingredients for the pizza dough
500g flour
150g sourdough ( or 25g fresh yeast)
A drizzle of extra virgin olive oil
A teaspoon of salt
350ml water

Filling
Radicchio
Smoked caciotta cheese ( Italian cheese)
Anchovies fillets


Method
Prepare the pizza dough: In an electric mixer start mixing the water with sourdough, add a little at a time the flour, salt and olive oil. Knead until you have a smooth dough. Cover the bowl and allow to rest until doubled in size. Roll out the dough with a rolling pin.

With a round cutter cut out a few discs or squares. In a large frying pan sauté the sliced radicchio with some  olive oil. Fill the pizza discs with the cooked radicchio, diced caciotta cheese and the anchovies. Seal the discs and form a bonbon. Bake at 180ºC for 20 minutes.
