Pear skillet cake


Serves 4
butter 4 tbsp + extra for greasing, softened
all-purpose flour 1 cup + extra for dusting
sugar 1/2 cup + extra for sprinkling
egg 1 or egg replacer powder 2 tsp
baking powder 1/2 tsp
baking soda a pinch
buttermilk 1/2 cup
salt a pinch
golden syrup or honey 2 tbsp
ginger 1/2 tsp, grated
pears 2, peeled and thinly sliced


Prepare an 8-inch iron skillet by rubbing it with butter and dusting with flour. If you don’t have an iron skillet, use a 9-inch baking pan. Pre-heat the oven to 180°C. In a bowl, beat the butter and sugar together till pale  and fluffy. Add the egg/ egg replacer, and beat once again.

In a separate bowl, sift the flour, baking powder and baking soda. Add this to the egg mixture, and incorporate the buttermilk. Combine everything.

Add the salt, golden syrup or honey and ginger, and mix well. Pour the batter in the prepared skillet (or  baking pan) and spread the pear slices over it like a fan. Sprinkle it with sugar and bake in the oven for 35- 40 minutes. Once cooked, let it cool. Serve in wedges with unsweetened clotted cream.
