Pla goong (prawn salad with lemongrass, roasted chilli paste and lime)


Serves 2
prawns 10, deveined
Thai roasted chilli paste 2 tbsp (see recipe below)
sugar 1 tbsp
lime juice 2 tbsp
shallots 4 tbsp
spring onions 1 tbsp
lemongrass 1 1/2 tbsp, sliced
mint a handful
red chillies 1-2, sliced


Blanch the prawns for 15 seconds. Prepare the dressing by mixing the chilli paste, sugar and lime juice. In a bowl, mix the shallots, spring onions, lemongrass, mint and chillies, then add the prawns and toss well with  the dressing. Serve.
