Poulet Basquaise


Serves 6
1.5 kg chicken pieces
3 tbsp flour
2 tbsp olive oil
1 big onion, sliced
2 red bell peppers, cored, seeded and sliced
2 green bell peppers, cored, seeded and sliced
2 garlic cloves, minced
5 tomatoes, diced
1 teaspoon dried thyme
2 bay leaves
Salt & freshly ground black pepper, to taste

Poulet Basquaise

1. Dust the chicken pieces in the flour. Heat the oil in a large casserole fry the chicken pieces until golden brown. Remove and set aside.

2. In the same casserole, add the onions, peppers, and cook, stirring frequently, for 5 mins, until softened and golden. Stir in the garlic and fry for another 3 mins. Add the tomatoes, thyme, bay leaves and the pieces
of chicken. Season to taste. Bring to a boil, then reduce heat to simmer, cover the casserole and cook for 40 mins.

3. Serve with steamed potatoes, or even with rice or pasta.
