Makes 6
- fresh pineapple juice 200ml
- coconut cream 80ml (try Real Thai available at gourmet stores)
- Malibu rum 80ml (available at liquor stores)
- lime 1, squeezed
Mix all the ingredients together, making sure the coconut cream is completely dissolved. Use a whisk if it helps. If your juice is quite bitty then pour the lot through a sieve. Pour into moulds and freeze overnight. Unmould carefully - don’t leave them waiting around too long as the alcohol content will make the pops melt quite quickly.
