Dumplings
4 large ripe avocados
½ cup diced tomatoes
¼ cup diced red onion
1½ tsp granulated garlic
1½ tsp granulated onion
1½ tsp kosher salt
3 Tbsp chopped cilantro
lime juice
24 to 30 won ton wrappers
1½ Tbsp avocado oil

Chile Sauce
½ cup avocado oil
¼ cup rice wine vinegar
1 Tbsp freshly grated ginger
½ tsp red pepper flakes
1 Tbsp orange juice
2 Tbsp honey
1 Tbsp chopped cilantro
salt and freshly ground
black pepper, to taste
lime juice, to taste

East-Meets-West Guacamole Dumplings with ChaCha Chile Sauce

Preparation − Dumplings
Peel and chop avocados into ½-inch pieces. Mix gently with tomatoes and red onion. Add granulated garlic,
granulated onion, salt and cilantro. Add lime juice to taste. Turn carefully to blend. Place 1 Tbsp guacamole into the center of each won ton wrapper. Fold corner to corner and pinch together, making a small purse shape. Moisten with water to seal. Heat the avocado oil in a 10-inch skillet until a drop of water skitters on the surface. Gently lower prepared dumplings into the skillet and sauté until golden-brown.

Preparation − Chile Sauce
In a small bowl, whisk all ingredients together. Serve alongside won tons for dipping. Store any unused sauce, covered, in the refrigerator for up to 1 week.
