Serves 4
60g shallots, chopped
50g red chilli, finely diced
1 tbsp finely chopped young ginger
3 garlic cloves, chopped
1 tbsp chopped chives
100g butter
5 drops Tabasco sauce
100ml soy sauce
100ml ponzu
2 tsp sugar
320g foie gras, sliced in
1cm-thick pieces
300g star fruit, washed and sliced into 1cm-thick pieces
1 tsp salt
1 tsp pepper
Pan-Seared Foie Gras With Glazed Star Fruit and Warm Spicy Sauce
1. Combine shallots, red chillies, ginger, garlic, chives, butter, Tabasco sauce, soy sauce, ponzu, and sugar in a saucepan. Cook, stirring, over medium low heat for about 5 mins until slightly thickened. Set aside.
2. Sear sliced foie gras on a hot pan just until the edges are golden brown. Be very careful not to overcook the foie gras, as it will shrink significantly.
3. In the same pan, sear the star fruit slices until the edges are brown.
4. Reheat the sauce, if necessary. Place seared foie gras and star fruit pieces on a plate and drizzle over the sauce. Season with salt and pepper to taste.
