• 500 ml cooked pumpkin
• 120 g (215 ml) cake flour
• 10 ml baking powder
• 2 ml salt
• 1 egg, beaten
• sunflower oil for frying Syrup
• 15 g (15 ml) butter
• 300 g (375 ml) sugar
• 200 ml milk
• 15 ml corn flour
• 175 ml cold water
• 1 stick cinnamon
Finely mash the pumpkin and mix with the rest of the ingredients, except for the oil. Heat the oil in a pan and fry tablespoonfuls of the batter in hot oil until browned on both sides. Drain on kitchen paper.
Make the syrup: Bring the butter, sugar and milk to the boil. Mix cornflour and water, stir into the milk mixture and bring back to the boil. pour the hot sauce over the hot fritters.
