Rye Bread Rolls


8 Rolls
A healthy dough for rolls and pizzas.
• 375 ml water
• 1 x packet (10 g) instant yeast
• 10 ml molasses
• 10 ml salt
• 10 ml caraway seeds
• 225 g (400 ml) wholegrain rye flour
• 335 g (600 ml) bread flour


Place water, yeast, molasses, salt and caraway seeds in the bowl of an electric mixer. Stir with a wooden  spoon until well mixed. Add rye flour and mix well. Slowly add bread flour and mix with the K-beater until it  forms a kneadable dough. Mix for 8 –10 minutes or until the dough comes together in one ball. place dough  in a clean, lightly oiled bowl. Cover with plastic wrap and allow to rise in a warm place until double in size,  about 30 – 45 minutes. Heat oven to 220ºC. Sprinkle a layer of flour on a work surface and turn dough out  onto it. Divide into 8 even portions. Roll into neat, round balls. place on a baking sheet that has been sprayed  with nonstick spray. Allow to rise again for 10 – 15 minutes in a warm place, or until they have doubled in size. Bake for 15 – 20 minutes or until golden brown and crispy.
