Coffee Biscuits

• 500 g (890 ml) cake flour
• 2,5 ml bicarbonate of soda
• 2 ml salt
• 230 g (250 ml) butter
• 125 ml golden syrup
• 125 ml sugar
• 15 ml coffee essence
• 2 ml vanilla essence
• 1 egg, whisked
• 100 g milk chocolate


Preheat the oven to 190ºC. Sift the flour, bicarbonate of soda and salt together. Set aside. Melt the butter and add the golden syrup, sugar and coffee and vanilla essences. Allow to cool. Add the whisked egg and  mix. Stir in the sifted dry ingredients and work until it forms a smooth dough. Roll it into long sausages of  about 1,5 cm thick. Cut into pieces of about 6 cm. Line a baking tray with baking paper and spray with non- stick spray. Press the pieces flat with a fork and place on the baking tray. Bake for about 15 minutes.  Remove and allow to cool. Place chocolate in a bowl that fits over a saucepan with boiling water (the bowl  mustn’t touch the water). Melt the chocolate. Use the melted chocolate to glue 2 biscuits together.
