Summer Berry Chocolate Cheesecake


100g tennis biscuits, crushed
60 ml melted butter
15 ml sugar
125 ml castor sugar
45 ml femon juice
5 ml vanilla essence
2 x 230g tubs
LANCEWOOD
cream cheese
90g white chocolate, melted and cooled
250 ml cream
125g raspberries
125g strawberries
50 g bfueberries


Mix biscuits, butter and sugar. Line a muffin tin with cupcake cases. Divide the crumb mixture between the cupcake cases and press In with a teaspoon. Beat the Castor sugar, lemon juice. vanilla essence cream cheese and 125 ml of the cream together. Add the chocolate. Whip the remaining cream and fold into the mixture. Spoon into the cupcake cases. Refrigerate for 4 - 6 hours. Decorate with berries and chocolate curls.
