Green Mango and Onion Marmalade Sandwich


Serves 4
baguette 1
arugula leaves 100g
turkey ham 10-12 slices
brie cheese 250g, sliced

THE MARMALADE
raw green mangoes 500g
olive oil 1/2 tbsp
onions 250g, sliced
water 1/4 cup
black peppercorns 1/2 tsp
sugar 225g
saffron a pinch
lemon juice 1/2 tbsp


To make the marmalade, wash, peel and slice the mangoes. Heat the olive oil in a pan. Add the onions and  sauté well. Add the mangoes with the water, peppercorns and sugar and bring to a boil. Add saffron and  simmer for 45 minutes. Add lemon juice and cool.

Smear the baguette with the marmalade. Top with the arugula leaves, turkey ham slices, sliced brie cheese  and some more marmalade.

Refrigerate the remaining marmalade. It will last for up to a month.
