Farmstall Pudding


• 4 x bottles (375 g) preserved quinces
• 180 g (320 ml) cake flour
• 3 ml baking powder
• 1 ml salt
• 30 ml sugar
• 120 g (130 ml) butter, diced


Preheat the oven to 180ºC. Pack the quinces into a 20 cm dish. Mix the flour, baking powder, salt and half  the sugar in a mixing bowl. Rub the butter into the dry ingredients until it resembles breadcrumbs. Pour the  mixture on top of the quinces and press down slightly. Sprinkle the rest of the sugar on top. Bake for about  45 – 55 minutes until browned and crisp on top. Serve warm with cream.
