Easy Food Recipes and Cooking - Leg Of Lamb With Roast Potatoes
4 – 6 Portions
• 1 leg of lamb on the bone
• 6 garlic cloves, peeled
• 1 sprig rosemary
• 100 ml olive oil
• juice of 2 lemons
• salt and freshly ground black pepper to taste
• 8 – 10 potatoes, peeled
• 8 medium onions, peeled
Preheat the oven to 180ºC. Cut small slits into the leg of lamb and insert the garlic.
Tie the rosemary sprig to the meat with kitchen string. Pour the olive oil into a roasting pan and add the lamb. Pour over the lemon juice and season with salt and pepper. Roast for 1 hour, then reduce the temperature to 160ºC.
Arrange the potatoes and onions around the lamb and baste with the meat juices. Roast for at least another 2½ hours, turning the potatoes and onions carefully after 1 hour so they brown on both sides.
Serve with your favourite vegetables.
