Sticky Toffee Pudding


• 100 g (125 ml) brown sugar
• 175 g (315 ml) self-raising flour
• 125 ml milk
• 1 egg
• 5 ml vanilla extract
• 50 g (50 ml) butter, melted
• 150 g caramel fudge squares, halved
• ice cream, for serving Sauce
• 200 g (250 ml) brown sugar
• 30 ml butter
• 500 ml boiling water


Preheat the oven to 190ºC. Grease a 27 x 20 cm oven dish with butter. Mix the brown sugar and self-raising flour in a large mixing bowl. Whisk together the milk, egg, vanilla extract and melted butter. Add this to the flour and sugar mixture and mix well with a wooden spoon. Fold the caramel squares into the batter and pour into the oven dish. Sprinkle with brown sugar and dot with butter. Pour over the boiling water and bake for 40 - 45 minutes. Serve with ice cream.
