• 1 cauliflower
• 35 g (60 ml) butter
• 35 g (60 ml) cake flour
• 400 ml warm milk
• 150 g cheddar cheese, grated
• salt and freshly ground black pepper to taste
Preheat the oven to 160°C. Steam or simmer the cauliflower until just tender and place in an ovenproof dish. Melt the butter over medium heat, add the flour and stir to form a paste. gradually add milk, stirring continuously until the sauce thickens. Add three-quarters of the grated cheddar and stir until the cheese melts. Season with salt and black pepper. Pour over the cauliflower and sprinkle the rest of the cheese on top. Bake until the cheese has just melted.
