• 280 g (500 ml) cake flour
• 20 ml baking powder
• 2 ml salt
• 15 ml butter
• 250 ml milk
• 500 ml sunflower oil for deep-frying
Sift the dry ingredients together. Rub the butter into the flour mixture until it resembles breadcrumbs. Add the milk and mix well. Heat the oil. Drop a teaspoon of dough into the oil. If it browns slowly, the oil is ready. Fry the vetkoek in the oil for about 10 minutes, turning the temperature down as you go. Drain on kitchen paper. Serve with butter and golden syrup.
