1 recipe Naples-style pizza dough
Fine semolina, for dusting
1 recipe Naples-style pizza sauce
1 lb. fresh mozzarella, thinly sliced
16 fresh basil leaves Olive oil, to taste

Place a pizza stone under the broiler; heat for 30 minutes. Working in 4 batches, dust 1 ball dough with semolina. Using your fingertips, press dough into a 10" circle about IA" thick, leaving a r crust around the edges. Hold dough straight up, and with fingertips circling crust, slide fingers around crust in a cir-cular motion as you would turn a steering wheel uniil dough in the center is stretched to about 1/8" thick; transfer to a semolina-dusted pizza peel. Spread 1/2 cup sauce over dough, and distribute a quarter each of the cheese and basil leaves; driz-zle with oil. Slide pizza onto stone; broil until cheese nicks and crust is puffed and charred in spots, 3-4 minutes. Serve hot. 



Calzone di Prosciutto e Ricotta (Pizza)

Place a pizza stone under the broiler; heat for 30 minutes. Dust dough with semolina; roll into an 8" x 10" rectangle and transfer to a semolina-dusted pizza peel. Spread ricotta over dough, leaving a 1" border. Distrib-ute the ham, salami, and half the pecoi 1110 over the top. Fold in half; pinch edges closed. Spread sauce over cop; sprinkle with remaining pecori no, plus basil leaves. Slide cal-zone onto stone; broil until crust is puffed and charred in spots, 2-3 minutes. Serve hot.

  1. Combine sugar, oil, yeast, and 2 cups cold water in bowl of a stand mixer fitted with a dough hook; let sit until foamy, 8-10 minutes. M ix flour and salt in a bowl. With motor running, slowly add flour mixture; mix until a smooth dough forms, 8-10 minutes. Transfer dough to a greased baking sheet; cover with plastic wrap. Let sit at room tem-perature 1 hour.
  2. Divide dough into 4 balls; trans-fer to a greased 9" x 13" dish; brush tops with oil. Cover with plastic wrap; refrigerate 48 hours.

Here is their advice on how to easily cook a whole lobster 

Bring at least a half-gallon of water per pound of lobster to a rolling boil in a very large pot if it is a 2-pounder. use a gallon of water.

Add in four tablespoons of sea salt per half gallon of water - that's a half-cup for a 2-pounder.

Carefully drop the lobsters, one at a time, headfirst into the water; Return the water to a boil, and then start timing:
1 lb. = 12-15 min
1,5 lbs. = 15-20 min
2-3 lbs. = 20-25 min

1. Combine flour, walnuts, brown sugar and salt.
2. Cut and rub in butter Add in the honey.
3. Add water and combine to form a dough. Wrap in plastic wrap and chill.
4. Roll out the dough. Place on a pie plate and bake in a preheated oven at 375T for 15 to 20 minutes or until golden brown.

  1. Sift together the cake flour, bread flour, sugar, baking powder and salt.
  2. Cut and rub butter into the dry ingredients. Add cheddar and Parmesan cheese.
  3. Add milk a tablespoon at a time until the mixture forms into a dough.
  4. Place the dough on a floured surface and knead by hand for a few seconds. Roll dough until 1 inch in thickness.
  5. Cut round biscuits out of the dough using a round cookie cutter. Sot aside.

1 medium zucchini, cut diagonally into 1/8-inch pieces
1 medium eggplant cut diagonally into 1/8-inch pieces

1/4 cup Parmesan cheese
500 grams fettuccini, cooked al dente
1 cup fresh basil leaves

  • 1 whole free range chicken, approx 1 kilo
  • 1 cup etag (salt cured smoked pork), cut into 1-inch cubes and soaked in water for at least an hour
  • Fresh mountain vegetables (Baguio beans, pechay and cabbage) 

  1. Grill whole chicken over charcoal, just enough to scorch skin and get a smokey flavor. Do not cook through.
  2. Chop the chicken and put in a soup pot. Add enough water to cover chicken. Add etag.
  3. Slow simmer until the chicken is cooked and tender
  4. Add the vegetables and cook through.

1/2 batch vodka crust
4 to 5 bananas, sliced salted caramel (recipe below) whipped cream, for topping toasted coconut slivers, for topping (optional)

  1. Remove vodka dough from the a refrigerator and roll out to fit into a 9-inch pie pan. Bake in a preheated 400°F oven for 20 minutes. then lower the tempertature to 375°F and continue baking for another 20 minutes. Let cool.
  2. Spread a layer of sliced bananas on the baked crust, then generously drizzle with salted caramel. Continue layering until bananas are used up.
  3. Cover with whipped cream and sprinkle with toasted coconut if you wish. Refrigerate until ready to serve.

1/2 batch vodka crust strawberry filling (recipe below)

  1. Remove the vodka dough from the riefrigorator and roll out into a circle, about 10 inches in diameter. Use a 7-inch pan to mark a ring on the crust. Spread the strawberry filling to cover the ring.
  2. Lightly fold the sides of the crust over the filling; no need to press. It's all right if the folded over edges are uneven since the galette is meant to be rustic and imperfect.
  3. Bake in a preheated 450°F oven for about 30 to 40 minutes until the crust is golden. Serve warm with vanilla ice cream Or whipped cream.

STRAWBERRY FILLING:
2 cups strawberries, hulled
1/2 cup sugar or to taste
2 teaspoons cornstarch mixed in 1 tablespoon water

  • 1 quart buttermilk
  • ½ quart whole milk
  • Rue leaves
Combine milk and buttermilk in a sauce pan and simmer over low heat, uncovered, for two hours or until cheese formed on the top hardens. Make sure not to boil. Allow cheese to cool before straining to separate curds from whey. Put curds in a container and top with rue leaves and refrigerate. Discard or
drink the whey

Almost all Ethiopians would size you up on your ability to cook this dish, which is served on special occasions. It can be prepared in a spicy version, by substituting chili powder for the turmeric. It is served with homemade cottage cheese. (Serves 4)
  1. 4 chicken drumsticks, skinned
  2. 4 large onions, chopped
  3. ¼ cup oil
  4. 1 tsp. turmeric
  5. 2 Tbsp. garlic, chopped
  6. 1 Tbsp. ginger, grated
  7. ½ tsp. black pepper
  8. ½ tsp. nutmeg
  9. ½ tsp. coriander
  10. ½ tsp. cumin
  11. 1 Tbsp. cardamom
  12. 4 eggs, hard boiled
  13. 2 limes, cut in half
  14. Salt to taste

1 extra large shallot, chopped
1 teaspoon garlic, minced
1 teaspoon fresh thyme leaves
5 tablespoons butter
1 1/2 cups arborio rice
1 teaspoon salt
1 1/4 cup white wine
2 cups chicken broth
1 1/2 cup mushroom broth
1 tablespoon parsley, chopped
1/4 cup parmesan, shredded
1/4 squeezed lemon, seeded
Salt and pepper to taste



In a small saucepan over medium heat bring the chicken and mushroom broth to a slow boil, reduce heat to lowest setting (to warm.)
