Vanilla Apple Puffs

Makes about 2 dozen Puffs

1/2 cup butter
1/2 cup water
1/2 cup whole milk
2 tablespoons sugar
1/4 teaspoon salt
1 1/4 cups all-purpose flour
4 eggs
1 teaspoon vanilla paste
1 1/2 cups diced Fuji apples oil, for deep-frying
1/4 teaspoon cinnamon powder vanilla sugar, for dredging (recipe below)


How to Make:

  1. In a large saucepan, heat butter, water, milk, sugar and salt until boiling and butter has melted. Add flour all at once and quickly stir with a wooden spoon until batter leaves the sides of the pan. Remove from heat.
  2. Add eggs one at a time, stirring well after each addition. Stir in vanilla paste and apples.
  3. Heat oil in a medium saucepan. When oil is hot, drop rounded teaspoonfuls of batter a few pieces at a time, and cook until the balls float and turn golden brown, flipping over to brown the balls evenly. Remove from pan.
  4. Blend cinnamon with vanilla sugar (recipe below) and place in a large bowl. Dredge apple puffs in the sugar blend until well coated. Serve hot. 

Vanilla Sugar:
3 cups white sugar
1 vanilla bean pod 

  1. Place sugar in a jar. Split a vanilla bean and scrape seeds into the sugar. Race vanilla pod in the sugar, covering it well.
  2. Screw cap tightly and let sit for a week until sugar absorbs the full flavor of the vanilla bean.
