Chocolate Sundae Pie

Serves 6 to 8

SUGAR CONE CRUST:
12 to 14 sugar cones, crushed
3 tablespoons ground nuts of your choice
2 tablespoons sugar
8 tablespoons unsalted butter

1. Combine the cones, nuts and sugar in a bowl.
2. Melt butter and fold into the mixture. Line the mixture in a buttered !Die pan.
3. Bake in a preheated 375°F oven for 5 minutes then cool.



CHOCOLATE FILLING:

  • 275 grams bittersweet chocolate
  • 5 tablespoons water
  • 5 egg yolks
  • 2 tablespoons chocolate syrup
  • 5 egg whites
  • 5 tablespoons sugar
  • 1 cup heavy cream whipped cream, for topping
  • Marshmallows, for topping
  • Maraschino cherries, for topping 


  1. In a saucepan, add chocolate to the water and melt over low heat, stirring continuously until smooth. Remove from the heat.
  2. Add in the egg yolks. Whip the mixture over low heat for a few minutes until it thickens slightly. Remove from the heat and add in the chocolate syrup Cool completely.
  3. Whip the egg whites with sugar until soft peaks form. Fold into the chocolate mixture.
  4. Whip the cream until soft peaks form then fold into the chocolate mixture as well.
  5. Pour the chocolate mixture into the baked sugar cone crust and freeze.
  6. Top with whipped cream, marshmallows and cherries before serving.
