Caramelized Fruit and Nut Pie

Serves 6 to 8
BROWN SUGAR NUT CRUST:
1 1/2 cups all-purpose flour
1/2 cup walnuts, coarsely chopped
1/4 cup brown sugar
1/2 teaspoon salt
8 tablespoons butter
2 tablespoons honey
3 tablespoons cold water
1. Combine flour, walnuts, brown sugar and salt.
2. Cut and rub in butter Add in the honey.
3. Add water and combine to form a dough. Wrap in plastic wrap and chill.
4. Roll out the dough. Place on a pie plate and bake in a preheated oven at 375T for 15 to 20 minutes or until golden brown.
FRUIT FILLING:
2 Granny Smith apples, cored and sliced into 1/4-inch thich pieces
1 cup sliced pears
1 teaspoon lemon juice
1 cup seedless grapes
1 cup canned sliced peaches
1/4 cup butter, melted
3/4 cup brown sugar
4 tablespoons cornstarch
1 teaspoon cinnamon
1/2 teaspoon nutmeg pinch of salt
2 tablespoons rum
1/4 cup raisins
Whipped cream or ice cream, for topping
1. In a bowl, combine apples and pears. Sprinkle with lemon juice. Toss in grapes and peaches. Set aside
2. Combine the rest of the ingredients and toss in the fruits. Cook over medium heat until the liquids thicken.
3. Place the filling into the baked crust.
4. Serve while still warm, preferably topped with whipped cream or ice cream.
