Roast Vegetable and Hummus Jalousie


1 onion, chopped
1 each small red and yellow capsicums, chopped
350g kumara, chopped into small pieces
1 zucchini, halved, sliced
1 1/2 tsp ground cumin
1 tbs olive oil
1 cup (160g) hummus
Finely grated zest of 1 lemon
2 tbs chopped coriander
375g block frozen puff pastry, thawed
1 egg, lightly beaten
1 tbs sesame seeds


Preheat oven to 200°C. Combine vegetables, cumin and oil in a roasting pan. Roast for 30 minutes, then allow to cool. Stir through hummus, lemon zest and coriander. Roll out pastry to a 30cm x 33cm rectangle. Cut in half lengthways to make 2 long rectangles. Place 1 rectangle on a lined baking tray and top with vegetable mixture, leaving a 2cm border. Brush the border with the egg. Fold the remaining pastry in half lengthways, then, using a sharp knife, cut at 2cm intervals along the folded edge, leaving a 2crn border. Carefully unfold pastry and place on top of the filling, pressing the edges to seal. Brush with egg and scatter with sesame seeds. Bake for 25-30 minutes or until the pastry is golden. Slice and serve.
