Easy Food Recipes and Cooking - Mango Grand Marnier Gratin

2 pieces vanilla sponge cake, cut into 2- x 2-inch squares
3 tablespoons + 1 teaspoon Grand Marnier
4 ripe mangoes, balled
1/2 cup whipping cream
3 egg yolks
1 large whole egg
3/4 cup confectioners' sugar, sifted
Powdered sugar, for dusting
- Preheat the oven to 425°F Prepare 6 small ceramic ramekins.
- Cut the sponge cake to about 1/4-inch thickness, then using the ramekin as a guide, cut the sponge cake into 6 discs. Place a sponge disc at the bottom of each ramekin.
- Brush or sprinkle a few drops of Grand Marnier on each disc. Arrange mango balls to cover the surface of the disc.
- Whip the whipping cream to medium peak. Set aside.
- In a stainless steel bowl, combine the egg yolks, whole egg and sugar, and whisk thoroughly until very pale yellow and light.
- Fold in the whipped cream and Grand Marnier.
- Divide the mixture among the prepared ramekins making sure that the mangoes are well covered.
- Bake about 5 to 8 minutes until lightly golden brown. Lightly dust with powdered sugar and serve warm.
