Beet Lemonade
Makes 1 pitcher
Ingredients:
1 cup sugar
1 ¼ cups water
1 cup lemon juice
¾ cup beet juice*
½ cup water (more to taste)
Ice
Fresh basil leaves (optional)
Beet Lemonade + Burrata
Directions:
Prepare simple syrup: in saucepan, heat sugar and water over medium heat, stirring frequently, until sugar
has dissolved. Cool to room temperature.
In a pitcher, combine simple syrup, lemon juice, beet juice and water. Stir to combine. Add additional water
to taste. Serve over ice. Garnish with basil leaves, if desired.
Look for beet juice at natural food stores. If using a juicer at home, 2-3 beets will yield 3/4 cup juice.
Burrata:
Fresh Mozzarella’s sultry cousin, Burrata has a sweet, milky flavor and silky texture. Burrata means “buttered” in Italian.
