Spring Lamb Burgers With Mint-Cucumber Raita and Grilled Spring Onions


For Burgers:
2 lbs. fresh spring lamb
1 T. cumin
1 tsp. ground coriander
½ tsp. allspice
1 tsp. black pepper
Salt for grilling
Olive oil for grilling
1 bunch spring onions (can be substituted with scallions)
4 sesame Kaiser rolls
Tomato slices and lettuce

For Raita:
1 cucumber peeled and seeded
½ medium red onion
½ bunch fresh mint
1 c. plain Greek yogurt
Salt and pepper

Spring Lamb Burgers With Mint-Cucumber Raita and Grilled Spring Onions

Burger Procedure:
1. Mix the lamb and dry spices and store in the refrigerator for 1 hour, then form into four 8-oz. patties.

2. Season with salt and rub with olive oil, grill to desired temperature.

3. Drizzle onions with olive oil, salt and pepper. Grill until charred and tender.

4. Brush Kaiser rolls with olive oil, toast on the grill. Assemble burgers by placing the lamb on the bottom of Kaiser roll, layering with tomatoes, lettuce, spring onion and top with raita.

Raita Procedure:
1. In the food processor, mince the cucumber, onion and fresh mint and strain with a fine mesh strainer.

2. In a bowl, mix yogurt, minced cucumber and season with salt and pepper to taste.
Yields 6-8 Servings
