Chocolate salami rolls


Serves 6
dark chocolate 250g, chopped (try Morde or Valrhona available at gourmet stores)
unsalted butter 75g (try President available at gourmet stores)
digestive biscuits 125g, broken into small pieces
walnuts 50g, roasted and chopped
pistachios 50g, chopped
strong coffee 15ml
powdered sugar for dusting


Melt the chocolate and butter for 1 minute in a microwave-proof bowl. Mix well and cool. (If the chocolate hasn’t melted, repeat for 30 second intervals).

Stir in the remaining ingredients and make sure they are uniformly mixed. Cover and refrigerate till slightly set, yet mouldable.

Transfer to sheets of cling-fi lm and roll into two salami shaped rolls – 2 inches wide, and 7 inches long.  Twist the sides like a sweet wrapper. Chill until fi rm, about 1-2 hours.

Remove from the cling-fi lm and roll in powdered sugar. Brush off the excess sugar and slice with a sharp  serrated knife. Store at room temperature in a cool place
