Easy Food Recipes and Cooking - Yam pla meuk (grilled squid salad)
Serves 2
squid 70g
celery 2 tbsp, chopped
spring onions 1 tbsp, chopped
rocket leaves a handful
THE DRESSING
lime juice 2 tbsp
fish sauce 2 tbsp (try Ayam available at gourmet stores)
palm sugar 2 tbsp
coriander root 1 tsp
red chillies 4, 2 small and 2 large
peanuts 1 tbsp, roasted and ground
To make the dressing, mix the lime juice, fi sh sauce, palm sugar, coriander root and the chillies. Blend well and add the roasted peanuts. Keep aside.
Grill the squid, mix it with the celery, spring onions, rocket and then toss with the dressing. Serve.
