Easy Food Recipes and Cooking - Sea bass ceviche with passionfruit, lime, sweet green mango and coriander dressing

sea bass 160g, cubed
sweet green mangoes 3 tbsp, diced
THE DRESSING
passionfruit purée 3 tbsp (try Ponthier available at gourmet stores)
passionfruit 1, fl esh scooped out (try Offerings available at gourmet stores)
fresh lime juice 2 tbsp
shallots 1 tsp, chopped
garlic cloves 1 tsp, chopped
ginger 1 tsp, chopped
coriander 1 tsp, chopped
chillies 1/2 tsp, chopped
salt a pinch
sugar 1 tsp
To make the dressing, mix all the ingredients and refrigerate until cool. Then spoon it over the sea bass and garnish with diced green mangoes.
