Easy Food Recipes and Cooking - Blueberry and Strawberry Ice Cream

• 500 ml milk
• 45 ml honey
• 5 egg yolks
• 45 ml caster sugar
• 250 g frozen strawberries
• 250 g frozen blueberries
• 12 wafer biscuits for serving
• fresh berries for serving
Bring the milk and honey to the boil over a low heat. Whisk the egg yolks and caster sugar together. Pour the hot milk into the egg mixture and whisk. Pour the mixture back into the saucepan and simmer over a low heat, whisking slowly until it thickens – about 8 – 10 minutes. Do not allow it to boil as it will separate. As soon as the hot mixture sticks to the back of a spoon pour it over the frozen berries. Pour into a food processor, purée until smooth, then transfer to a bowl which can be frozen and place in the freezer. Whisk the mixture every 30 minutes to break up the crystals. Keep doing this until the mixture is thick and almost completely frozen. Scoop out the ice cream and serve with wafer biscuits and fresh berries.
