• 4 wholewheat tortillas
• 1 portion tomato base
• 240 g sun-dried tomatoes in oil, drained
• 2 x 100 g goat cheese
• 10 ml dry oregano
• salt and freshly ground black pepper to taste
• 30 g fresh basil leaves
Preheat the oven to 200ºC. place tortillas on a baking sheet sprayed with non-stick spray. Divide the tomato base between the tortillas and spread evenly. Sprinkle over the tomatoes. Slice cheese and place on the pizzas. Sprinkle over the oregano. Season well with salt and black pepper. Bake for 15-20 minutes or until golden brown. Scatter over the fresh basil leaves and serve.
