About 50 small men using A 5 x 5 cm cutter
• 125 g (135 ml) butter
• 100 g (125 ml) brown sugar
• 1 egg yolk
• 350 g (625 ml) cake flour
• 5 ml bicarbonate of soda
• 15 ml powdered ginger
• 40 ml golden syrup
Preheat the oven to 180ºC. Line a baking tray with baking paper and spray with non-stick spray. Mix the butter and brown sugar with an electric beater until light and creamy. Add the egg yolk and mix well. Sift the cake flour, bicarbonate of soda and ginger together. Slowly add dry ingredients and syrup to butter mixture. Mix well after every addition. Knead dough well on a work surface. Roll out the dough between two layers of wax paper to a thickness of about 3 mm. Cut shapes with a gingerbread-man biscuit cutter. place biscuits on lined baking tray and bake for 10 minutes. Allow to cool.
