Easy Crumbed Chicken


 4 portions

• 4 chicken drumsticks
• 4 chicken thighs
• 1 egg, whisked
• salt and freshly ground black pepper to taste
• 150 ml sunflower oil
• 100 g dried breadcrumbs


Preheat the oven to 180ºC. place the chicken pieces in a large mixing bowl. pour the egg over the chicken, making sure every piece is covered. Season with salt and black pepper. pour the sunflower oil into a roasting pan large enough for the chicken to be placed in a single layer. put the breadcrumbs in a plastic bag. Shake one chicken piece at a time in the crumbs until well covered. place chicken in the pan and roast for about 30 minutes. Turn and roast for another 30 minutes until golden brown and crispy.
