Peanut Butter Filling
• 105 ml (7 tablespoons) smooth peanut butter
• 250 g cream cheese
• 100 ml icing sugar, sifted
Mix all the ingredients together well.
Chocolate Whoopie Pies
30 pancakes
• 115 g (205 ml) cake flour
• 5 ml baking powder
• 30 ml cocoa powder
• 3 eggs, separated
• 140 ml milk
Preheat the oven to 180ºC. Sift the flour, baking powder and cocoa together. Whisk the egg yolks and milk together. Form a hollow in the centre of the dry ingredients and pour in the egg mixture. Whisk well until smooth. Whisk the egg whites until stiff and fold into the mixture. Spoon the batter into a whoopie pie pan. Bake for 3 – 4 minutes. Remove and allow to cool in the pan for about 1 minute. Turn out and cool on a rack. Spread some of the peanut butter icing on a biscuit and cover with another one. Dust with cocoa powder.
