Kairi Rice


Serves 4
oil 2 tbsp
mustard seeds 1 tsp
curry leaves 10-12
red chilli 1, whole
urad dal 1 tsp
chana dal 1 tsp
peanuts 2 tbsp
onion 1, fi nely chopped
green chilli 1, fi nely chopped
turmeric powder 1 tsp
basmati rice 1kg, boiled
raw mangoes 2, 1 grated + 1 cut into strips
coconut 1 tbsp, grated
salt and pepper to taste
coriander 1 tbsp, fi nely chopped


Heat the oil in a wok. Add the mustard seeds, curry leaves, red chilli, urad dal, chana dal and peanuts. Sauté till the dal and peanuts turn golden in colour. Add chopped onions and green chilli. Sauté for 2-3 minutes  more.

Add turmeric and mix well. Add the boiled rice, grated raw mango and coconut. Mix well and season.  Garnish with raw mango strips and coriander.
