8 – 10 Slices
• 1 litre lukewarm water
• 1 x packet (10 g) instant yeast
• 15 ml salt
• 630 g (2 litres) brown bread flour
• 250 ml bran
• 250 ml raisins
• 100 g (250 ml) mixed nuts, chopped
Preheat the oven to 180ºC. Pour the water into a large mixing bowl and dissolve the yeast and salt. Add the rest of the ingredients. Whisk for 5 minutes or until everything is well mixed. Pour the dough mixture into a 30 cm cake tin sprayed with non-stick spray. Allow to rise for 20 minutes in a warm place. Bake for 45 – 50 minutes or until a cake tester comes out clean. Turn out onto a wire rack and allow to cool.
