6 – 8 Bread Rolls
• 1 x packet (10 g) instant yeast
• 120 ml lukewarm milk
• 50 g caster sugar
• 10 g salt
• 300 g (535 ml) cake flour, plus extra for rolling out
• 3 eggs
• 100 g butter
• 100 g sesame seeds
1. Place the yeast, milk, sugar, salt, flour and 2 of the eggs together in an electric mixer. Mix on high speed with your K-beater until the dough pulls away from the edges of the bowl and adheres to the beater in one large ball. It takes about 5 – 8 minutes.
2. Use a sharp knife to cut the butter into small cubes and add slowly to the dough while the mixer is running. Beat on a medium speed until all the butter is incorporated. Place the mixture into a clean bowl and allow it to rise in a warm place until it doubles in volume – about 30 – 40 minutes.
3. Use a pair of scissors to cut dough into balls the size of small apples. (If you have a scale, you can weigh the dough into 130 g portions.) Use the palm of your hand to roll out the balls on a floured surface.
4. Preheat the oven to 180°C. Place the balls on a baking sheet that has been sprayed with non-stick spray and allow to rise in a warm place until doubled in size. It takes about 30 minutes. Slightly whisk the remaining 1 egg. Brush the egg mixture over theballs and sprinkle with sesame seeds. Bake for 20 – 25 minutes or until golden brown and cooked through. Allow to cool on a wire rack.
