Dad's Beer Ribs


• 600 g pork or beef ribs
• salt and freshly ground black pepper to taste
• 4 garlic cloves, finely chopped
• 45 ml olive oil
• 15 ml ground cloves
• 1 x can (340 ml) lager
• 250 ml tomato sauce
• 125 ml apricot jam
• juice and zest of 3 lemons


Preheat the oven to 230ºC. Place the ribs on a baking sheet and season well with salt and pepper. Sprinkle  over the garlic and olive oil. Cover with tinfoil and bake for 2 hours or until the meat is tender. Remove from  oven and pour the pan juices into a clean pot. Add the rest of the ingredients and mix well. Pour over the  meat and return to oven. Roast uncovered for another 20 – 25 minutes until the ribs are golden brown and sticky.
