Apple and Cinnamon Cake


Serves 4
oil 1 tsp, for greasing
refined flour 1/2 cup + 1 tsp extra
baking powder 1/2 tsp
sugar 1/2 cup
cinnamon powder 3/4 tsp
eggs 2
butter 25g, melted
honey 1 tbsp
apple 1/2, chopped


Line the base and the sides of a baking tin with butter paper. Use some oil to achieve this.

Sift the flour, baking powder, sugar and cinnamon powder together. Beat the flour mixture with the eggs for  5 minutes. Meanwhile preheat the oven to 180°C.

Thereafter add the melted butter and honey. Mix gently. Use the additional flour to roll the chopped apples  and mix them into the batter.

Bake for 20 minutes at 180°C. When done, cool for 1 hour and serve with tea or coffee.
