Vegetables Rotini Pasta

Serves 6
1 package rotini pasta
2 garlic cloves - sliced thinly
1 small onion - sliced thinly
2 carrots - sliced thinly
1 zucchini - sliced thinly
1/4 sliced cabbage purple
100g mussels
2 tablespoons olive oil
Juice of 1 lemon
1 teaspoon thyme
salt to taste
1 teaspoon pepper or as needed

In a large bowl, bring water to the boil adding a teaspoon of salt. Add pasta and cook for about 7 to 8  minutes or until done. Drain in a strainer and keep it covered until required.

In a large saucepan, heat olive oil and add onions and garlic. Let it cook for about 3 minutes.

Add carrot, zucchini and mussels. stir and cook for 3 minutes. Put cabbage, lemon juice, salt, pepper and  thyme. Mix well.

Add the cooked pasta and stir. Taste to check if needs more salt. Serve hot.
