Raw food pizza

Serves 4
Pizza base
300g chopped almonds
200g ground flaxseeds
2 chopped courgettes
1 chopped onion
1 teaspoon salt

15 sun-dried tomatoes soaked for 6 hours
600g ripe tomatoes without seeds
70g chopped onion
30g extra virgin olive oil
the juice of 1 lemon
10 basil leaves

60g almonds or macadamia nuts soaked for 8 hours
A pinch of salt
1/2 garlic clove

Mix the ingredients of the pizza base to form a ball. Divide in 4 parts and flatten them on a non-stick dehydrator sheet. Dehydrate for 12 hours at 40ºC. Prepare the tomato sauce chopping all the ingredients.
Prepare the “cheese” blending the drained seeds. Season with garlic and salt. If you need add just a bit of fresh water. It should have the consistency of ricotta cheese.

Spread the tomato sauce on the pizza base, add the cheese and decorate with fresh basil leaves or other vegetables (mushroom, courgette, spinach....)
