Asparagus Muffin

Makes 8
130g flour
130ml fresh milk
60g olive oil
1 egg
50g grated cheese
90g asparagus trimmed and boiled for 1 minute
1 teaspoon baking powder
Salt and pepper

In a bowl put all the wet ingredients: milk, egg, oil and beat with a fork for a minute.

In another bowl mix all the dry ingredients: flour, cheese, salt and pepper, baking powder and chilly pepper if you like.
Gently fold the wet ingredients into the dry ones and stir through the asparagus. Do not over mix and stop until mixture is combined.

Spoon mixture evenly between the muffin cases. Bake at 180ÂșC for 15 minutes. If a toothpick pick inserted in the middle comes out clean they are cooked. Best eaten out of the oven but even the day after are good if stored in a airtight container.
